Wolf kitchens in Beverly, and the refrigeration in them

Beverly kitchens divide between houses lived in all year and houses that stand quiet for months, and a refrigeration cabinet treats those two lives very differently. The dormant one is the one that surprises its owner.

A cabinet left running in an empty house

A built-in that runs for months with the door barely opened is not resting. The compressor still cycles, the defrost still runs, and the drain still needs to clear — but nothing disturbs the frost patterns, so a marginal drain or a lazy defrost termination has time to build an ice mass that a daily-use cabinet would never accumulate. The owner returns to a freezer that is warm and a compartment floor with water in it.

A cabinet switched off and closed up has the opposite problem: sealed damp, and a gasket that comes back smelling of it. Propping the door is the whole fix, and it is the advice people most often wish they had been given.

Salt, and the condenser again

North Shore air is marine air, and the condenser takes it continuously. On these calls the coil and the condenser fan are inspected first, cleaned properly, and the fan draw is measured rather than judged by ear. A fan that has begun to labour in salt-laden air will pass a listening test and fail a meter.

Before you close a house up

  • Decide whether the cabinet runs or stops — half measures cause the trouble
  • If it stops: empty, clean, and leave the door propped open
  • If it runs: clear the drain and confirm defrost is terminating properly first
  • Shut off and drain any ice maker supply line before a winter vacancy
  • Clean the condenser, because six quiet months will not do it for you

The cooking half of a Wolf and Sub-Zero kitchen is somebody else’s trade. Refrigeration is ours, and that is the whole of what is offered here.

Cubes had welded into one lump in the bin and the drawer would not budge. The drain was frozen solid behind the liner. He thawed it properly instead of chipping away, then cleared the trough and checked the fall.

Compressor noise was carrying up into the dining room through the floor. The mounting grommets had perished. He renewed them and levelled the cabinet, and the hum is now something you have to listen for.

Old 600 series in an antique house up on the Post Road, and I fully expected to be told it was time to replace the thing. Instead he rebuilt the door hardware, cleaned a condenser nobody had touched in years, and it runs quieter than it did before.
